Add boneless chicken breasts. Sear them until they’re golden on both sides, then add garlic and ginger. Coat the chicken in paprika, turmeric, coriander and cumin. Pour in a can of crushed tomatoes and some chicken broth and bring it to a simmer before adding heavy cream, salt and pepper. Simmer until chicken is cooked through. Garnish with cilantro and serve over rice with lemon wedges.
Mexican Chocolate Avocado Mousse
This Mexican Chocolate Avocado Mousse is a smooth and spicy finish to any fall meal. It’s also easy to make. Combine ripe avocado flesh, raw cacao powder, coconut milk, honey, vanilla, cinnamon and spicy ground ancho chile in a food processor. Process until it’s smooth. Chill it in the fridge before serving.
