The chilly, late fall wind is blowing in Calgary. You can’t fight the changing of the seasons but you can fortify yourself with some soothing and spicy comfort food. Vegetarian Tortilla Soup

This Vegetarian Tortilla Soup calls for tofu, rather than the traditional chicken. It’s every bit as satisfying and fun to make. Start by toasting your chiles over an open flame (using metal tongs) until the aroma fills your kitchen at Glenmore Gardens. You can also toast them in a dry pan over medium heat. Let them cool, then remove the stems and seeds. Break them up into pieces and blend them with tomatoes. Next, heat some oil in a large pot and add onion and garlic. Cook until the leaves are wilted, then ladle into bowls. Serve topped with sliced avocado, tortilla chips and shredded cheese.

Chicken Curry

This perfectly spiced and comforting Chicken Curry can be prepared in just 30 minutes. Start by heating oil in a pot over medium-high heat and adding onions, sauteing until soft. Add boneless chicken breasts. Sear them until they’re golden on both sides, then add garlic and ginger. Coat the chicken in paprika, turmeric, coriander and cumin. Pour in a can of crushed tomatoes and some chicken broth and bring it to a simmer before adding heavy cream, salt and pepper. Simmer until chicken is cooked through. Garnish with cilantro and serve over rice with lemon wedges.

Mexican Chocolate Avocado Mousse

This Mexican Chocolate Avocado Mousse is a smooth and spicy finish to any fall meal. It’s also easy to make. Combine ripe avocado flesh, raw cacao powder, coconut milk, honey, vanilla, cinnamon and spicy ground ancho chile in a food processor. Process until it’s smooth. Chill it in the fridge before serving.
